Fried Ash Plantain with Bairaha Chicken Pumpkin, Potato and Egg Plant Curry


 
 
 
 
 
 
 
 
Ingredients:

Small Cubes of ash plantain : 250 g

Small Cubes of  Chicken : 500 g

Chopped Red Onion : 04 no’s

Green Chilli : 2 – 3 no’s

Turmeric

Potato

Pumpkin

Egg Plant

Cinnamon

Curry Powder : 1 table spoon

Roasted Chilli Powder

Rampe & Curry Leaves

Coconut Milk : 01 cup
 
Method:
 
1. Cut the Chicken Breast into small cubes.
2. Add onion, Curry leaves, Garlic and Sera leaves into the pan and stir until brown.
3. Add chicken with all the spices and stir. Add little water.
4. Add pumpkin, Potato, egg plant together with chicken & cook for about 15 minutes.
5. Finally add coconut milk and coriander to finish with.
6. Serve with Steamed rice.
